A great high protein lunch box option or after school snack without the nuts. Seeds and pea protein are used instead to boost nutrition and protein content. These bliss balls also use pure maple syrup to sweeten which is a great alternative to dates.

CHOCOLATE PROTEIN BLISS BALLS

Low gluten (contains oats), Dairy free, Nut free, No refined sugar

1 cup organic oats blended in a food processor until smooth

2 T chia seeds or flax seeds or pumpkin and sunflower seeds - or a mix

1/4 c unflavoured pea protein

1/4 c coconut flour

3 T raw cacao powder

1/4 cup coconut oil

4T real 100% pure maple syrup

1 cup boiling water

Desiccated coconut for rolling

Place dry ingredients into a bowl and mix.

If coconut oil is solid, gently melt in a saucepan with the maple syrup. Add to the dry mixture with 1 cup of boiling water.  Mix until combined. Leave for 5-10 minutes to allow some of the moisture to be soaked up by the coconut flour.

Roll into balls and roll in desiccated coconut.
