Easy Peasy Gluten Free Choc Chip Cookies

If you are not trying to hide veggies, boost protein or nutrient intake then these gluten free biscuits are great to have as an afternoon treat. Refined sugar free and super simple to make with an electric mixer they taste similar to shortbread biscuits but with the bonus of chocolate chips.


EASY PEASY GLUTEN FREE CHOC CHIP COOKIES

Gluten free, Nut free, Refined Sugar free


125g softened butter

1 t vanilla essence

1/2 c coconut sugar

1 egg yolk (place leftover egg white in zip lock bag in freezer)

1 1/2 cups gluten free all purpose flour

1 t baking powder

2 tsp water

1/3 c dark choc chips

Preheat oven  to 160 deg Celsius fan forced (180 degrees conventional). 

Line a baking tray with baking paper.

Beat on low with an electric mixer the first 4 ingredients until smooth (about 4 mins).

Add sifted flour, baking powder, water and chocolate chips. Then mix with a wooden spoon to make a soft dough. 

Roll into balls and squish down onto lined tray around 5 cm apart. 

Bake for 15 minutes or until lightly browned.
