Healthier ANZAC biscuits

Oats are technically gluten free, but because they can be contaminated with gluten those with coeliac disease often avoid. I find most who are gluten sensitive can tolerate organic oats however. 

Adapted from the Edmonds Cookbook standard recipe, but with less sugar. These are YUM and sure to be a family favourite.


HEALTHIER ANZAC BISCUITS

Low gluten, Nut free, Refined Sugar Free


1/2 Cup All purpose gluten free flour

1/4 Cup coconut sugar

2/3 Cup shredded coconut

3/4 Cup organic oats

50g Butter

1 tablespoon of honey

1/2 teaspoon baking soda

2 T boiling water


Mix together flour, sugar, coconut and rolled oats.

Gently melt butter and honey together in a small saucepan.

Dissolve baking soda in the boiling water and add to the butter and honey.

Stir the butter mixture into the dry ingredients.

Place approx 1 T of batter onto cold greased or baking paper lined trays. 

Bake at 180 deg Celsius for approx 15 mins or until golden.
